SAMAR CUISINE JOINS TERRA MADRE ASIA IN BACOLOD

The rich culinary heritage of Samar stepped onto the international stage as Dioscoro “Intoy” Doncillo, one of the province’s celebrated kitchen heroes, demonstrated the iconic Catbalogan Tamalos during the prestigious Terra Madre Asia and the Pacific event in Bacolod City.

Representing the Secret Kitchens of Samar, the Provincial Government of Samar’s flagship culinary heritage program, Intoy captivated delegates, chefs, food advocates, and agricultural innovators from across the region with the story, soul, and unique preparation of the tamalos, a delicacy deeply rooted in tradition, community identity, and local agricultural abundance.

“Tamalos symbolizes Samarnon resilience, creativity, and Samar’s deep connection to its land and food producers.”

During the live demo, Intoy highlighted the meticulous process behind tamalos: from the slow-cooked peanut sauce base to the careful layering of meat and spices wrapped in banana leaves, echoing centuries-old methods passed down through families and barangay kitchens. Beyond technique, he shared how tamalos symbolizes Samarnon resilience, creativity, and Samar’s deep connection to its land and food producers.

The presentation also highlighted Samar’s ongoing efforts to elevate local cuisine on the global map.

Through the Secret Kitchens of Samar initiative, recently recognized internationally for its depth of storytelling and cultural preservation, the province aims to promote traditional recipes, honor community cooks, and develop food-based tourism anchored on sustainability, heritage, and local pride.

Governor Sharee Ann Tan applauded the recognition, stating that Samar’s presence at Terra Madre reaffirms the province’s commitment to championing food traditions that empower communities.

“By sharing it with the world, we honor our culture bearers and inspire the next generation of Samarnon culinary artisans.”

“Our cuisine is our identity. By sharing it with the world, we honor our culture bearers and inspire the next generation of Samarnon culinary artisans,” Tan stressed.

As one of the most resonant showcases at Terra Madre Asia and the Pacific, Intoy Doncillo’s tamalos demo opened doors for deeper conversations on indigenous food systems, local food sovereignty, and the value of grassroots culinary knowledge, reinforcing the message that the flavors of Samar deserve a place on the international table.
